Ingredients
- Ciabatta - 1 piece
- Skin-On Chicken Breasts - 10.6 oz
- Olives stuffed with lemon - 10 pieces
- Tarragon - 4 sprigs
- Black Cumin (Cumin) - ½ teaspoon
- Ground Black Pepper - a pinch
- Salt - a pinch
- Bay leaf - 4 pieces
- Marinated cherries - 1.4 oz
- Olive Oil - 0 fl oz
- Balsamic Vinegar - 3 tablespoons
- Honey - 2 tablespoons
Step by Step guide
Step 1
For the sauce, mix together: crushed cherries, balsamic vinegar, and honey in a blender. Heat the mixture, ensuring it does not boil, but achieves a uniform consistency.
Step 2
For the filling: boil the chicken breast with cumin, salt, pepper, and bay leaves. Once done, cool to room temperature. Chop the cooled chicken into small pieces.
Step 3
In a blender, combine: chicken, leaves from three sprigs of tarragon, coarsely chopped olives, and add the prepared cherry sauce.
Step 4
Blend for one minute, avoiding a puree consistency.
Step 5
If the resulting mixture is too dry, add oil and blend again.
Step 6
Divide the ciabatta into three or four pieces, cutting each piece lengthwise into two or three layers (depending on the size of the ciabatta or the amount of filling).
Step 7
Place the filling between the layers, before adding the top layer of ciabatta, sprinkle the filling with leaves from the last sprig of tarragon.
