Ingredients
- Cilantro - to taste
- Sea urchin roe - to taste
- Grated Ginger Root - a pinch
- Lime Juice - 2 pieces
- Sesame Oil - to taste
- Mild Chili Spice - to taste
- Black sesame seeds - to taste
- Soy Sauce - 2 tablespoons
Step by Step guide
Step 1
Using scissors, cut the sea urchins around the 'belly button' (the opening on the underside).
Step 2
Remove the roe (the orange contents) and rinse well under running water until all membranes and shell fragments are removed.
Step 3
Drain in a sieve to remove excess water.
Step 4
Place the clean roe in a small deep bowl. Add grated ginger, chili pepper, finely chopped cilantro, soy sauce, juice of two limes, and a couple of drops of sesame oil. Gently and thoroughly mix and refrigerate for 15 minutes.
Step 5
Remove from the refrigerator and mix again. Serve in portions in shot glasses or porcelain spoons for Asian soups. Sprinkle with sesame seeds.
