- Water - 6 fl oz
- Semolina - 2.6 oz
- Butter - 1 tablespoon
- Salt - ½ teaspoon
- Grated Pecorino Pepato Cheese - 2 tablespoons
- Chicken Egg - 1 piece
Step by Step guide
Step 1
In a small saucepan, melt the butter over medium heat, add salt and water. Then pour in the semolina and stir. Almost immediately, the semolina will turn into a thick porridge, which needs to be mixed thoroughly with a silicone spatula or wooden spoon until smooth. As soon as the porridge starts to pull away from the sides of the saucepan, remove it from the heat.
Step 2
Add the lightly beaten egg and Parmesan. Mix well.
Step 3
Using a teaspoon, shape small balls from the semolina mixture. Cook the semolina dumplings in boiling lightly salted water, or better in broth, for no more than 4-5 minutes.
Step 4
Dumplings boiled in plain water without salt can serve as a base for a sweet dessert. They can be served drizzled with berry syrup and whipped cream. If preparing them this way, the salt in the semolina mixture should be replaced with an equal amount of sugar.
Step 5
The already boiled dumplings can also be sautéed in butter and served as a side dish with meat.
