Description
Shiitake Mushrooms with Green Onions in Smoked Oil
Ingredients
- Peanut Butter - 1 tablespoon
- Semi-Smoked Sausage - 4.6 oz
- Green onion tops - 12 pieces
- Garlic - 4 cloves
- Chicken Broth - 2 cups
- Salt - ½ teaspoon
- White Pepper (whole) - ¼ teaspoon
- Shimeji mushrooms - 17.6 oz
Step by Step guide
Step 1
Trim the stems from the mushrooms.
Step 2
Heat a wok over high heat, then add the peanut oil, spreading it across the surface and heating until it begins to smoke. Add the bacon cut into medium pieces and fry until crispy. Use a slotted spoon to transfer to a paper towel and reserve for another dish.
Step 3
In the wok with the fat, add the finely chopped green onions (only the white and light green parts) and thinly sliced garlic. Sauté for a minute. Then pour in the broth around the sides, season with salt and pepper, and bring to a boil.
Step 4
Add the mushroom caps, reduce the heat, and cook uncovered for about 5 minutes until tender, stirring occasionally.
Step 5
Transfer to a cutting board, let cool slightly, and slice thinly. Transfer to a bowl and drizzle with the sauce from the wok.
