Ingredients
- Tiger shrimp in brine - 2 pieces
- Rice Paper - 2 pieces
- Mango - 1.1 oz
- Tobiko Caviar - 2.1 oz
- Arugula - 0.4 oz
- Cress salad - 0.4 oz
- Chard - 0.4 oz
- Romaine lettuce - 1.1 oz
- Sweet Chili Sauce - to taste
Step by Step guide
Step 1
Boil the shrimp in their shells in salted water with the addition of lemon juice for 3–4 minutes. Once cooked, peel the shrimp.
Step 2
Cut the mango into thin strips and slice the shrimp in half lengthwise.
Step 3
Soak a sheet of rice paper in warm water and place it on your work surface. Lay down romaine lettuce leaves, shrimp, tobiko, arugula, watercress, and Swiss chard on the paper, then tightly wrap the filling in the rice paper. Repeat the process with the remaining ingredients. Serve with sweet chili sauce.
