Shrimp Bisque
Ingredients
- Butter - 1 tablespoon
- Olive Oil - 1 tablespoon
- Shallot - 1 piece
- Celery stalk - 1 piece
- Garlic - 1 clove
- Tarragon - 6 pieces
- Tiger shrimp in brine - 3.5 oz
- Brandy - 2 tablespoons
- Dry White Wine - 4 tablespoons
- Chicken Broth - 10 fl oz
- 33% Cream - 3 fl oz
- Paprika - a pinch
- Chives - ½ teaspoon
- Meyer Lemon Juice - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Melt the butter in the olive oil and sauté the shallot, celery, and finely chopped garlic for 1–2 minutes until the ingredients soften.
Step 2
Increase the heat, add the shrimp and tarragon, and sauté for 2 minutes, stirring. Add the brandy. Pour in the wine and broth and bring to a boil. Boil for 2 minutes.
Step 3
Transfer the contents to a blender and puree until smooth. Strain through a sieve, pressing to extract the liquid. Add the cream, paprika, and lemon juice. Season with spices and heat through.
Step 4
Ladle into soup bowls and add finely chopped chives.
