Ingredients
- Salt - ¼ teaspoon
- Dry White Wine - 1 cup
- Shrimp - 15.9 oz
- Green peppercorns - 4 pieces
- Coriander essential oil - 5 pieces
- Bay leaf - ½ piece
- Parsley - 5 stems
- Tarragon - 1 stem
- Ocean salt - 1 teaspoon
- Meyer Lemon Juice - 2 teaspoons
- Ground Black Pepper - ¼ teaspoon
- Ketchup - 1 cup
- Horseradish Leaves - 1.2 oz
- Mild Chili Spice - 1 teaspoon
- Cayenne Pepper - a pinch
Step by Step guide
Step 1
For the sauce, mix ketchup, horseradish, salt, ground black pepper, chili, cayenne pepper, and half of the lemon juice.
Step 2
Peel the shrimp, leaving the tails on. In a pot, place the shrimp shells, 3 cups of water, and sea salt. Bring to a boil, reduce heat, cover, and simmer for 20 minutes. Strain the broth.
Step 3
Bring the broth with the remaining ingredients, except for the shrimp, to a boil over high heat and cook for 2 minutes. Turn off the heat, add the shrimp, cover, and let sit for 8-10 minutes until the shrimp turn pink. Transfer the shrimp to ice and then dry. Serve in stemmed glasses with cocktail sauce.
