Shrimp cocktail with mango and basil sauce

Ingredients

  • Coarse Salt - to taste
  • Mango - 2 pieces
  • King Prawns - 17.6 oz
  • Meyer Lemon Juice - 1 teaspoon
  • Rice Vinegar for Sushi - 1 teaspoon
  • Grated Lemon Zest - 2 teaspoons
  • White Pepper (whole) - to taste
  • Fresh basil leaves - 5 pieces

Step by Step guide

Step 1

Boil the shrimp in salted boiling water until cooked, about 3–4 minutes. Drain and transfer to ice water. Then drain again.

Step 2

For the sauce, blend the peeled and chopped mango, zest, lemon juice, and vinegar in a blender. Lightly salt and pepper. Blend until smooth, then fold in finely chopped basil.

Step 3

Peel the shrimp and arrange on a plate. Serve with the sauce.
