Description
Shrimp croquettes are a delicious appetizer made from fresh shrimp, seasoned to perfection, and coated in a crispy breading. They are often served with a tangy dipping sauce and are perfect for parties or as a tasty snack.

- Shrimp - 10.6 oz
- Milk - 17 fl oz
- Ground Black Pepper - to taste
- Butter - 4 spoons
- Wheat Flour - 7.1 oz
- Whole egg - 1 piece
- Cream - 1 fl oz
- Lemon - 1 piece
- Egg white - 3 pieces
- Breadcrumbs - to taste
- Parsley - 3.5 oz
- Salt - to taste
- Vegetable Oil - 1½ l
Step by Step guide
Step 1
Boil and peel the shrimp. Place the heads and shells in a small saucepan, cover with milk, season with pepper, and bring to a boil. Simmer for 10 minutes over medium heat, then strain through a sieve.
Step 2
Prepare the roux: In a skillet, melt the butter and stir in the flour until a thick ball forms. Gradually add the cooled roux to the milk, bringing it back to a boil while stirring constantly, and cook until thickened. Remove the saucepan from heat.
Step 3
Whisk the egg yolk with the cream and pour it into the sauce. Bring it back to a boil, then remove from heat and add the peeled shrimp.
Step 4
Pour the mixture into the prepared mold. Line the mold with greased parchment paper beforehand. Smooth the mixture and cover it again with greased paper. Allow it to cool and then refrigerate for 3-4 hours.
Step 5
Once the mixture has set, divide it into portions. For convenience, you can use a pastry ring to cut out the croquettes. Roll the future croquettes in flour, dip them in beaten egg whites, and coat them on all sides with breadcrumbs.
Step 6
Fry the croquettes in a generous amount of vegetable oil for about 5 minutes. Sauté the parsley leaves for a few seconds, then place them on a paper towel. Season with salt. Serve the croquettes with the parsley and a wedge of lemon.
