Ingredients
- Tiger shrimp in brine - 2 lbs
- Garlic - 7 cloves
- Mild Chili Spice - 0.1 oz
- Butter - 1.1 oz
- Grated Pecorino Pepato Cheese - 2.8 oz
- 33% Cream - 17 fl oz
- Parsley - 1.8 oz
- Fresh basil leaves - 1.1 oz
- Olive Oil - 1 fl oz
- Meyer Lemon Juice - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a blender, combine parsley, basil, olive oil, lemon juice, and 2 cloves of garlic until it reaches a paste-like consistency, but not too smooth.
Step 2
In a saucepan, heat the butter, add the minced garlic and chili pepper, and sauté for thirty seconds, stirring constantly.
Step 3
Peel the shrimp, leaving only the tails, and be sure to remove the digestive tract. Add them to a saucepan. Once they turn pink, add the pesto, mix everything thoroughly, and while constantly stirring, let it soak for one minute.
Step 4
Add cream and a little hot water to keep the dish from being too rich. Season with salt and pepper to taste, let it simmer for a minute, then add finely grated Parmesan cheese, which will thicken the sauce; allow it to fully dissolve. Remove from heat and serve immediately. Enjoy it with your favorite bread, dipping it into the sauce.
