Shrimp Skewers

Ingredients

  • Shallot - 1.2 oz
  • Shrimp - 40 pieces
  • Lime Juice - 1 tablespoon
  • Brown Sugar - ½ tablespoon
  • Salt - 1 teaspoon
  • Macadamia Nuts - 5 pieces
  • Garlic - 4 cloves
  • Thai Bird's Eye Chili - 3 pieces
  • Peanut Butter - 3 tablespoons
  • Grated Ginger Root - 0.5 oz
  • Coconut Milk - 0.3 cups

Step by Step guide

Step 1

Clean the shrimp. In a bowl, mix the shrimp and lime juice, set aside. Puree the shallots, sugar, salt, garlic, nuts, chili, and ginger in a blender.

Step 2

In a pan, heat the peanut oil over medium heat and add the paste. Sauté for 3–4 minutes. Add the coconut milk, simmer for another 2–3 minutes. Cool down. Pour the mixture over the shrimp and chill for 4 hours.

Step 3

Soak bamboo skewers in water for 10 minutes. Remove the shrimp from the refrigerator and thread onto the skewers. Grill for 3–5 minutes on a preheated grill or grill pan.
