Ingredients
- Meyer Lemon Juice - 2 tablespoons
- Olive Oil - 2 tablespoons
- Salt - ½ teaspoon
- Ground Black Pepper - ½ teaspoon
- Chili Flakes - ½ teaspoon
- Garlic - 2 cloves
- Peeled Cooked Shrimp - 32 pieces
- Fresh Bay Leaf - 32 pieces
- Lemon - 4 pieces
Step by Step guide
Step 1
Preheat the grill or barbecue.
Step 2
In a bowl, mix lemon juice, half of the olive oil, salt, black and red pepper, and minced garlic. Add the shrimp, stir, and let sit for 10 minutes.
Step 3
Cut the lemons into 8 wedges and transfer to a bowl. Add the bay leaves and the remaining olive oil. Mix well.
Step 4
On 8 skewers, alternately thread 4 lemon wedges, 4 shrimp, and 4 bay leaves. Place on the grill and cook for 2 minutes on each side until the shrimp are cooked through.
