Description

This toast topped with a shrimp salad mixed with mayonnaise, named after a Danish port rather than a Swedish one, was invented by restaurateur John Smith. In the post-war decades, when foreign fast food threatened local culinary traditions, he served as their guardian. Today, "Skagen" can be found in almost any restaurant in America—both upscale and casual.
