Ingredients
- Olive Oil - 4 tablespoons
- Peeled shrimp - 24.7 oz
- Lime Juice - ¾ cup
- Lime Zest - 1 teaspoon
- Serrano Chili - 1 piece
- White Onion - 3.5 oz
- Garlic - 1 clove
- Plum Tomatoes - 7.1 oz
- Olives stuffed with red pepper - 3.5 oz
- Chopped Cilantro (Coriander) - 1.2 oz
- Lime - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper. Cook for about 3 minutes, until the shrimp are opaque in the center. Transfer to a large bowl.
Step 2
Add lime juice and zest to the skillet, warm slightly, and pour over the shrimp.
Step 3
Add finely chopped onion, minced chili, crushed garlic, and the remaining 2 tablespoons of olive oil. Mix well and let sit for 30 minutes.
Step 4
Add diced tomatoes, olives, and cilantro. Cover with plastic wrap and refrigerate for 1-2 hours.
Step 5
Serve the appetizer in martini glasses and garnish with lime wedges.
