Ingredients
- Peeled Cooked Shrimp - 2 lbs
- Celery salt - 6 stalks
- Cucumbers - 17.6 oz
- Scallions - 3.5 oz
- Sweet Chili Sauce - 2 spoons
- Lemon - 2 pieces
- Soy Sauce - 3 spoons
- Rice Vinegar for Sushi - 2 spoons
- Sesame Oil - 1 tablespoon
- Peanut Butter - 1 tablespoon
- Garlic - 4 cloves
- Sugar - 1 tablespoon
- Mild Chili Spice - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Peel the celery stalks and cut them into thin matchsticks (about 5–6 cm long). Peel the cucumbers, scoop out the seeds with a spoon, and cut them into matchsticks to match the celery. Finely chop the garlic and green onions.
Step 2
In a wok, heat the peanut oil and sauté the garlic until fragrant, then add the shrimp and celery, stirring and frying for a minute. Next, add the cucumbers, rice vinegar, soy sauce, chili sauce, thinly sliced chili pepper, sesame oil, chopped green onions, sugar, and the juice of two lemons. Mix well and simmer for another minute or two.
Step 3
Taste, season with salt if necessary, stir, remove from heat, and serve, for example, with rice.
