- Red Curry Powder - 2 spoons
- Peeled Cooked Shrimp - 17.6 oz
- Coconut Milk - 13 fl oz
- Pineapple - 17.6 oz
- Fish Oil - 3 spoons
- Brown Sugar - 2 spoons
- Fresh basil leaves - 20 pieces
- Kaffir Lime Leaves - 2 pieces
- Mild Chili Spice - 1 piece
- Vegetable Oil - 1 tablespoon
Step by Step guide
Step 1
Heat vegetable oil in a wok over medium heat. Add the curry paste and sauté until fragrant, about one minute.
Step 2
Add coconut milk, shrimp, diced pineapple, fish sauce, sugar, and lime leaves. Bring to a boil and cook for 3-5 minutes until the shrimp are cooked through.
Step 3
Remove from heat and check the salt level. Then add a handful of chopped basil leaves and serve, sprinkled with finely chopped chili.
