Step 1
Peel large raw shrimp and remove the dark intestinal vein by making a cut along the back – this allows the vein to be easily pulled out. You can also use pre-peeled shrimp, which are available at supermarkets.
Step 2
Heat a skillet with oil and sauté the shrimp until they turn pink. Pour in the sherry and Tabasco, add the finely chopped parsley, season with salt and pepper, stir vigorously, and serve.
