Ingredients
- Tiger shrimp in brine - 4 pieces
- Snap Peas - 0.4 oz
- Carrot - 1.4 oz
- Grated Ginger Root - 0.4 oz
- Miso Paste - 0.6 oz
- Sake - 1 fl oz
- Soy Sauce - 1 fl oz
- Corn Starch - 0.4 oz
- Sugar - 0.7 oz
- Water - 10 fl oz
- Bamboo shoots - 2.1 oz
- Dashi powder - 0 fl oz
Step by Step guide
Step 1
Remove the intestine from the shrimp using a toothpick along the entire length, without removing the shell; connect the shrimp by piercing it at the tail and head with a toothpick; peel and grate the ginger on a fine grater.
Step 2
Slice the bamboo into 0.5 cm thick pieces; peel the carrot and cut it into 0.5 cm rounds (optionally shape the carrot like a flower).
Step 3
In 300 ml of boiling water, add dashi, sake, sugar, and soy sauce, and stir; pour a small amount of broth over the miso paste and dilute it to a smooth consistency, then add it to the broth; add ginger, carrot, bamboo, and shrimp, and cook over medium heat with the lid on for 10 minutes.
Step 4
Remove the shrimp and take off the shell, remove the toothpick, and arrange the shrimp on plates.
Step 5
In the broth, add the cornstarch diluted in 40 ml of water and cook for another 2–3 minutes, stirring constantly, until it reaches a liquid jelly-like consistency.
Step 6
One minute before finishing cooking, add the sugar snap peas.
Step 7
Serve the vegetables alongside the shrimp, pour the sauce over, and enjoy.
