Description
Shurpa is loved throughout the Turkic-speaking world, from Uzbekistan to Azerbaijan, and even far beyond. Moreover, each culture has its own version of shurpa, with multiple variations. Here is a basic version: it doesn't require too many ingredients, it's simple to prepare, and the taste is just right.
Ingredients
- Rack of Lamb - 2 lbs
- Onion - 1 head
- Orange Bell Peppers - 1 piece
- Carrot - 1 piece
- Tomatoes - 3 pieces
- Potato - 5 pieces
- Parsley - 1.8 oz
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Place the lamb at the bottom of the pot, cover it with water, and set it on the heat.
Step 3
When the water boils, skim off the foam, reduce the heat, cover with a lid, and simmer for at least an hour and a half.
Step 4
Remove the cooked meat from the broth, separate it from the bones, chop it, and return it to the pot.
Step 5
Peel and finely chop the onion.
Step 6
Peel and slice the carrot into rings.
Step 7
In vegetable oil, sauté the chopped onion until golden brown, then add the diced carrot and cook, stirring, for another couple of minutes.
Step 8
Add the onion and carrots, coarsely chopped tomatoes, potatoes, and bell pepper to the soup. Cover with a lid and simmer for another 20 minutes.
Step 9
Season the soup with salt and pepper to taste, and add chopped herbs.
Step 10
Remove from heat and serve.
