Description

Sicilian Arancini are delicious rice balls that are typically filled with a savory mixture of meat, cheese, and peas, then coated in breadcrumbs and fried until golden brown. They originated in Sicily and have become a beloved treat in many Italian-American restaurants across the country.

Ingredients

  • Olive Oil - 3 spoons
  • Onion - ½ heads
  • Carrot - ½ pieces
  • Celery stalk - ½ pieces
  • Lean Beef - 3 oz
  • Passata Tomato Sauce - 7.1 oz
  • Pork Mince - 3 oz
  • Passata Tomato Sauce - 2 spoons
  • Spanish onions - 1 head
  • Arborio rice - 10.6 oz
  • Saffron - ¼ spoons
  • Grated Pecorino Pepato Cheese - 2 spoons
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Wheat Flour - 1.8 oz
  • Breadcrumbs - 10.6 oz
  • Chicken Egg - 2 pieces
  • Vegetable Oil - to taste

Step by Step guide

Step 1

In a tablespoon of olive oil, sauté the chopped onion, carrot, and celery. Add both types of ground meat and lightly brown. Pour in the tomato sauce and paste, and simmer for another forty minutes.

Step 2

In the remaining olive oil, sauté the chopped red onion until soft. Add the rice, stir, then add saffron and one and a half cups of water. Bring to a boil, cover with a lid, and remove from heat. After twenty minutes, stir in the Parmesan cheese, salt, and pepper.

Step 3

Mix the flour, eggs, and half a cup of water. In a separate bowl, pour in the crumbs. Using your hands, shape a tablespoon of rice into a round patty, place a teaspoon of filling in the center, and mold it into a ball.

Step 4

Dip into the egg mixture and coat with breadcrumbs. Shape the remaining arancini and refrigerate for twenty minutes.

Step 5

In a large skillet, heat the oil to 356°F. Fry until golden brown. Remove and place on paper towels to cool.
