Sicilian Fish Soup
Ingredients
- Spanish onions - 1 head
- Celery stalk - 2 pieces
- Fennel - ½ piece
- Garlic - 2 cloves
- Mild Chili Spice - 1 piece
- Olive Oil - 1 fl oz
- Dry White Wine - 7 fl oz
- Passata Tomato Sauce - 28.2 oz
- Butternut Squash - 17.6 oz
- Fish Oil - 17 fl oz
- Smoked haddock fillet - 7.1 oz
- Halibut - 7.1 oz
- Peeled Cooked Shrimp - 12 pieces
- Lemon - ½ piece
- Parsley - 0.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Grate the butternut squash using a grater.
Step 2
Finely chop the onion, celery, fennel, garlic, and chili pepper.
Step 3
Heat the oil in a large skillet, add the onion, celery, fennel, garlic, and chili pepper, and sauté until softened.
Step 4
Add the wine, passata, squash, and stock, and bring to a boil. Cover and simmer on low heat for 30 minutes. Season to taste.
Step 5
Coarsely chop the salmon and halibut and add to the skillet. Add the shrimp or langoustine tails, cover, and cook for 3 minutes or until done.
Step 6
Taste the soup and adjust seasoning with salt, pepper, and lemon juice if needed.
Step 7
Serve drizzled with olive oil and sprinkled with chopped parsley.
