Description
Recipe taken from the book 'River Cottage. Food for the Little Ones' by John Smith.
Ingredients
- Butter - 0.5 oz
- Leek - 1 piece
- Potato - 7.8 oz
- Milk - 12 fl oz
- Cod fillet - 7.1 oz
- Smoked haddock fillet - 2.6 oz
- Peeled shrimp - 3.5 oz
- Parsley - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat the butter in a pot over medium heat. Once melted, add the chopped leek (only the white part) and sauté for 5–10 minutes until soft. Add the diced potato and milk, bring to a boil, cover, and simmer for about 15 minutes until the potato is tender.
Step 2
Meanwhile, remove the flesh of the white and smoked fish from the skin, carefully remove the bones, and cut into small pieces.
Step 3
When the potato is cooked, add the fish and shrimp to the chowder and cook on very low heat, stirring frequently, for 3–4 minutes until the fish is cooked through. If desired, add chopped herbs, season with salt and pepper, and serve immediately.
