Description
It is very delicious to serve this soup with rye croutons rubbed with fresh garlic.
Ingredients
- Pumpkin - 21.2 oz
- Onion - 1 head
- Olive Oil - 3 tablespoons
- Pumpkin seed oil - 1 teaspoon
- Ocean salt - to taste
Step by Step guide
Step 1
Cut the onion and pumpkin into large cubes.
Step 2
Pour olive oil into the bottom of a pot, add the onion, and sauté lightly until almost translucent. Add the pumpkin, pour in water, and let it cook until ready (until the pumpkin starts to break down into strands).
Step 3
Add salt and puree all the ingredients with a blender directly in the pot.
Step 4
Pour into bowls, garnish with drops of pumpkin oil and ground chili.
