Simple rhubarb compote
Ingredients
- Rhubarb - 2 lbs
- Sugar - 1 cup
- Water - 3 qt
Step by Step guide
Step 1
Using a knife, cut off the top and bottom parts of the rhubarb stalks and peel the stalks from the outer layer.
Step 2
Cut the stalks into pieces about 2–3 centimeters long.
Step 3
In a large pot, bring 4 liters of water to a boil, add sugar, and boil for 2 minutes. Note! The specified amount of ingredients will yield a rather tart compote; if you prefer it sweeter, add more sugar.
Step 4
Add the rhubarb. Adjust the heat so that the compote simmers gently. Cook for 13–15 minutes.
Step 5
Then turn off the heat, cover the compote with a lid, and let it steep for 2 hours.
Step 6
After that, you can either strain it through a sieve if you don't like the pulp, or drink it with the pulp.
