Description

Recipe from a cookbook by John Smith 'Favorite Dishes. Selected Recipes'.

Ingredients

  • Cucumbers - 5 pieces
  • Garlic - 5 cloves
  • Mild Chili Spice - ½ piece
  • Soy Sauce - 1 tablespoon
  • Sesame Oil - 1 tablespoon
  • Rice Vinegar for Sushi - 1 tablespoon
  • Cilantro - to taste

Step by Step guide

Step 1

Trim the ends of the cucumbers and cut them into four pieces.

Step 2

Slice the 5 cloves of garlic into rings.

Step 3

Place the cucumbers and garlic into nested bags. There should be several bags, and they must be very sturdy to avoid tearing. Twist them to expel excess air.

Step 4

Next, take something to smash the cucumbers. The main goal is to crush the cucumbers and garlic to release their juices and mix them. The salad is called 'Smashed Cucumbers' because they are smashed.

Step 5

Transfer the smashed cucumbers to a bowl and add half of the sliced chili pepper.

Step 6

Add one tablespoon each of soy sauce and rice vinegar, as well as one tablespoon of fragrant sesame oil. In China, it is customary to add MSG, but this is optional.

Step 7

Mix thoroughly.

Step 8

Top with coarsely chopped cilantro.

Step 9

Mix again and serve immediately.
