Ingredients
- Boneless pork shoulder - 24.7 oz
- Beef chuck roast - 42.3 oz
- Cayenne Pepper - 0.2 oz
- Mustard Greens - 0.5 oz
- Ground coriander - 0.5 oz
- Ocean salt - 2.1 oz
- Ground Dried Garlic - 1.4 oz
- Smoked salt - 1.1 oz
- Ground Black Pepper - 1.1 oz
- Sugar - 1.8 oz
- Paprika - 1.8 oz
Step by Step guide
Step 1
Cut the meat into cubes, add spices, and grind in a meat grinder, first using the coarse plate, then the fine plate.
Step 2
Place the meat in the refrigerator for 24 hours to allow it to chill and firm up.
Step 3
Stuff the pre-prepared pork casings with the filling, previously greased with oil.
Step 4
The size of the sausages can vary.
Step 5
Smoke the sausages for 30 minutes.
