Smoked Eggplant Paste
Ingredients
- Salt - 2 tablespoons
- Eggplants - 14.1 oz
- Olive Oil - 1½ tablespoons
- Onions - 2 heads
- Minced garlic - 1 clove
- Chopped Parsley - 2 tablespoons
- Lemon Juice - 1 tablespoon
Step by Step guide
Step 1
Prepare the grill with wood chips.
Step 2
Sprinkle the tray with salt. Place the eggplant slices on the salt. Sprinkle them with salt on top. Let sit for 15 minutes.
Step 3
Rinse the eggplant slices with cold water and dry with a paper towel. Place the eggplant slices on the grill rack (they may slightly overlap). Leave to cook for 25 minutes or until softened. Remove from heat, cover, and let cool.
Step 4
Heat the oil in a small skillet over medium heat. Add the onions and garlic, cooking and stirring for 10 minutes or until golden brown.
Step 5
Mash the cooled eggplant to a consistency close to puree. Transfer to a bowl, add the onions, garlic, parsley, lemon juice, and hot sauce. Add salt and pepper to taste. Serve immediately. Store in the refrigerator for no more than 2 days.
