- Saffron - a pinch
- Butter - 0.9 oz
- Leek - 2 pieces
- New Potatoes - 10.6 oz
- Milk - 15 fl oz
- Fish Oil - 10 fl oz
- Hot-Smoked Muksun Fillet - 15.9 oz
- Chives - 0.3 oz
Step by Step guide
Step 1
Place a large pinch of saffron in a glass and pour in 1 tablespoon of hot water. Let it steep for 10 minutes. Meanwhile, melt the butter in a pot and sauté the finely chopped leeks over medium heat for 5 minutes, stirring and leaving the lid off.
Step 2
Add the sliced potatoes (1 cm thick), then the milk, stock, and saffron solution. Bring to a boil and generously season with freshly ground pepper. Cover with a lid, reduce the heat, and simmer for 10 minutes until the potatoes are tender.
Step 3
Cut the fish into small pieces and add it to the soup. Cook for about 5 minutes until the fish is cooked through.
Step 4
Ladle the soup into small bowls and sprinkle with chives.
