- Brown Sugar - 1 cup
- Canned Peaches - 28.2 oz
- Ketchup - 0.3 cups
- Apple Cider Vinegar - 0.3 cups
- Chili jam - 0.3 cups
- Worcestershire Sauce - 0.3 cups
- Salt - to taste
- Black Pomegranate Molasses - 2 tablespoons
- Ground ancho chili pepper - 1 teaspoon
- Rice Vinegar for Sushi - 2 tablespoons
- Baking Tomatoes - 1 can
- Ground Black Pepper - to taste
- Cayenne Pepper - 2 tablespoons
- Veal Tenderloin - 13 lbs
Step by Step guide
Step 1
In a saucepan, whisk together the sugar, 1/2 cup of canned peaches, ketchup, chili sauce, vinegar, Worcestershire sauce, 1 teaspoon of salt, molasses, ground chipotle pepper, and crushed tomatoes. Bring the mixture to a boil over medium heat. Cook for about 30 minutes until it thickens. Then transfer to a blender and blend until smooth. Pour the sauce into a bowl and add the remaining canned peaches.
Step 2
Prepare the smoker. For this recipe, a boneless beef rib roast works best. Rub the meat with the remaining salt, black pepper, and cayenne pepper. Place the meat in the smoker and cook until done.
Step 3
