Ingredients
- Chicken Broth - 3 qt
- Doctor's Sausage - 21.2 oz
- Semi-Smoked Sausage - 17.6 oz
- Cooked Ham - 7.1 oz
- Salad Potatoes - 7 pieces
- Pickles - 6 pieces
- Salt - to taste
- Onion - 2 heads
- Passata Tomato Sauce - 3 tablespoons
- Spiced Tomato Juice - 17 fl oz
- Green peppercorns - ½ teaspoon
- Bay leaf - 2 pieces
- Vegetable Oil - to taste
- Sugar - to taste
- Lemon - to taste
- Olives stuffed with lemon - to taste
- Sour Cream - to taste
Step by Step guide
Step 1
Boil the potatoes until tender, then peel them.
Step 2
Dice the sausage, meat, and potatoes.
Step 3
Bring the broth to a boil, add the potatoes, two types of sausage, and meat.
Step 4
Prepare the briz (this is a special dressing for soljanka). For it, finely chop the onion, sauté until golden in vegetable oil, season with tomato juice and paste, add diced pickles, a bit of sugar to taste, and simmer for 7–10 minutes.
Step 5
When the broth boils, add salt and the briz.
Step 6
Grind the bay leaves and peppercorns in a coffee grinder.
Step 7
Bring the soljanka to a boil, cook for 2–3 minutes, and add spices.
Step 8
Serve with olives, lemons, and sour cream.
