Solyanka with Smoked Ribs and Sausages
Ingredients
- Smoked pork knuckle - 7.1 oz
- Hunter's Sausages - 7.1 oz
- Beef - 3.5 oz
- Onion - 2 pieces
- Carrot - 1 piece
- Pickles - 7.1 oz
- Butter - 1.8 oz
- Capers - to taste
- Green peppercorns - to taste
- Passata Tomato Sauce - 2 tablespoons
- Bay leaf - 2 pieces
- Crushed Tomatoes in Their Own Juice - 5.3 oz
- Olives stuffed with lemon - 1 can
- Herbs - 1 bunch
- Lemon - 1 piece
Step by Step guide
Step 1
Put water on the stove. Immediately add beef, ribs, one whole peeled onion, olives, and pepper to the pot.
Step 2
While the meat is boiling, prepare the sauté. For this, slice the carrot into half-rings and finely chop the onion. Place a frying pan on the stove and add 20 grams of butter. Once the butter starts to melt, add the carrot and reduce the heat. Sauté for 5–7 minutes on low heat and add to the pot.
Step 3
Do the same with the onion: after the carrot, add the remaining butter and onion to the frying pan. Sauté for 5–7 minutes on low heat and add to the pot after the carrot.
Step 4
Cut the hunting sausages and add them to the pot. Toss in the capers (7–10 pieces). Leave on low heat for 15 minutes.
Step 5
While waiting, skim off the fat.
Step 6
Then take the tomatoes in their own juice and turn them into a puree (remove the skin, blend until smooth). Cut the pickles into small cubes and sauté everything in the frying pan. After 5 minutes of sautéing, add to the pot. Next, toss in the bay leaves and a tablespoon of tomato paste.
Step 7
Let it simmer for 30 minutes.
Step 8
Remove from heat, slice the lemon into half-rings. Serve in bowls, adding a slice of lemon and herbs to each bowl. Sour cream can be added.
