Ingredients
- Chicken Broth - 3 qt
- Sauerkraut - 21.2 oz
- Turnips - 2 pieces
- Parsley - 1 piece
- Onion - 1 head
- Vegetable Oil - 3 tablespoons
- Chicken Egg - 1 piece
- Sour Cream - 3 tablespoons
- Parsley - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Drain the sauerkraut, chop it finely, and sauté it in a deep skillet without fat, adding cabbage brine as needed.
Step 2
Peel, wash, and finely chop the parsley root, carrots, and onion.
Step 3
Sauté in heated vegetable oil.
Step 4
In a deep pot, heat the strained broth and add the sauerkraut first.
Step 5
After 10-12 minutes, add the sautéed parsley, carrots, and onion.
Step 6
Cook until ready, then remove from heat and cool.
Step 7
Pour the cold soup into bowls, top with sour cream and a piece of hard-boiled egg.
Step 8
Sprinkle with finely chopped dill or parsley.
