Ingredients
- Beef - 28.2 oz
- Ground Black Pepper - to taste
- Rosemary - 1 sprig
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Take grain-fed beef (I used a chuck roast).
Step 2
Sear the beef over an open flame (I use a torch) until a crust forms to seal in the juices.
Step 3
Place the beef in the sous-vide device for 3 hours at 140°F.
Step 4
Slice and serve with mustard and horseradish (can be served hot or cold).
