South African cold yogurt soup with cucumbers

Ingredients

  • Sour Cream - 3 tablespoons
  • Yogurt powder - 1 qt
  • Courgette - 1 piece
  • Dry White Wine - 3 tablespoons
  • Cucumbers - 2 pieces
  • Olive Oil - 1 teaspoon
  • Scallions - 1 bunch
  • Herbs - 1 bunch
  • Salt - to taste
  • White Pepper (whole) - to taste

Step by Step guide

Step 1

Peel the cucumbers and zucchini, remove the seeds, and cut them into strips. Marinate with salt for 1 hour.

Step 2

Drain the cucumbers and zucchini and pour in the buttermilk mixed with yogurt and sour cream.

Step 3

Add the wine and olive oil to the cold soup.

Step 4

Chop the green onions, dill, and parsley. Sprinkle over the soup. Season with salt and pepper.
