Description
Vegetable broth can be replaced with chicken broth, and tomatoes can be substituted with 1 tablespoon of tomato paste (heaping).
Ingredients
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Garlic - 1 clove
- Long-Grain Rice - 2 cups
- Canned Tomatoes (Pelati) - 3.5 oz
- Chicken Broth - 3 cups
- Dried Rosemary - a pinch
- Salt - to taste
Step by Step guide
Step 1
In a saucepan, heat the olive oil and lightly brown the rice, stirring. Add the finely chopped onion and minced garlic. Sauté for another 3–4 minutes, stirring, until the onion is soft.
Step 2
In a small pot, bring the broth to a boil.
Step 3
Add the tomatoes, oregano, and salt to the broth. Then carefully transfer the rice and cook, covered, for 15–20 minutes on low heat until done.
Step 4
Turn off the heat and let it sit, covered, for 5 minutes. Serve immediately.
