Description
For this cocktail, you can use ginger ale or sparkling white wine as the alcoholic base in addition to champagne. The cocktail can also be made non-alcoholic by substituting lemonade for the wine. We will need cranberry juice, so it's best to crush fresh cranberries with a pestle and strain them through a sieve or cheesecloth (or make the juice in a juicer). Raspberries can be fresh or frozen. The fruit base requires intermediate preparation — chilling for 8 hours.
Ingredients
- Black Pomegranate Molasses - 1 piece
- Mandarins - 2 pieces
- Raspberry leaves - 3.5 oz
- Dried cranberries with sugar - 5.3 oz
- Dry Champagne - 10 fl oz
Step by Step guide
Step 1
Cut the pomegranate into quarters over a bowl to collect all the juice. Discard the white membranes and place the pink seeds into a blender.
Step 2
Add the raspberries. Peel the mandarins and remove as much of the white pith as possible. Add the segments to the blender.
Step 3
Pour the cranberry juice into the blender and blend all the ingredients until smooth. Strain the resulting mixture through a sieve to remove any remaining seeds. Set aside to chill for 8 hours.
Step 4
Fill the glasses halfway with the puree. Top up with wine or champagne. Gently stir and serve immediately.
