Ingredients
- Garlic - 4 cloves
- Ham - 10 lbs
- Ocean salt - 1.5 teaspoons
- Coriander essential oil - 1 tablespoon
- Lemon-Pepper Mix - 1 tablespoon
- Wheat Flour - 1 tablespoon
- Butter - 3 tablespoons
- Dijon Mustard - 4 fl oz
- Maple syrup - 2 fl oz
- Italian chopped parsley - 2 bunches
- Orange Bell Peppers - 0.5 piece
Step by Step guide
Step 1
In a bowl, mix the mustard and maple syrup. Cover with plastic wrap and refrigerate.
Step 2
Preheat the oven to 356°F.
Step 3
Trim the rind and excess fat from the ham.
Step 4
In a bowl, mash the minced garlic and finely chopped bell pepper with salt until it forms a paste. Grind the coriander seeds and pepper mix in a coffee grinder and mix with the flour, butter, and garlic paste.
Step 5
Rub the paste onto the ham and place it in a greased baking dish. Bake in the oven for about 1.25 hours, until a crust forms and the internal temperature of the meat reaches 149°F.
Step 6
Transfer to a platter and let rest for 15 minutes before serving. Serve with the sauce, garnished with parsley.
