Spiced Potatoes

Ingredients

  • Salt - to taste
  • Parsley - 2 stems
  • Saffron - 1 stem
  • Bouillon cube - 1 piece
  • Paprika - 1 teaspoon
  • Salad Potatoes - 3 lbs
  • Onion - 1 piece
  • Olive Oil - 6 tablespoons

Step by Step guide

Step 1

Finely chop the onion and parsley, peel the potatoes (preferably with red skin) and cut them into small pieces.

Step 2

Heat the oil in a pot, add the onion and cook, stirring, for 4-6 minutes until it starts to darken. Then add the potatoes and cook, stirring, for another 5 minutes. Stir in the paprika. Cook for another 2 minutes and pour in enough water to cover the potatoes. Crumble the bouillon cube and add salt.

Step 3

Crumble the saffron in a mortar with 2-3 tablespoons of the water in which the potatoes are cooking, then return the mixture to the pot and stir well. Cook over medium heat for 20-30 minutes until the potatoes are soft. Sprinkle with parsley and serve immediately in a deep dish.
