Ingredients
- Tomatoes - 1 piece
- Yellow Beets - 7.1 oz
- Vegetable Oil - ¼ cup
- Toasted Cumin Seeds - ½ teaspoon
- Garlic - 5 cloves
- Spanish onions - 1 head
- Coriander essential oil - 1 teaspoon
- Turmeric - ¾ teaspoon
- Cayenne Pepper - ½ teaspoon
- Cilantro - 0.7 oz
- Butter - 1 tablespoon
- Salt - 1 teaspoon
Step by Step guide
Step 1
Soak the peas in cold water for 1 hour. Drain and transfer to a large pot.
Step 2
Add the chopped tomatoes and 3 cups of water. Bring to a boil.
Step 3
Reduce the heat, cover, and simmer for about 45 minutes to 1 hour, until the peas are soft. Remove the skins from the tomatoes and mix well. Keep warm on very low heat.
Step 4
Heat the canola oil in a small skillet over high heat. When the oil starts to smoke, add the cumin seeds and cover. When the seeds stop sizzling, add the finely chopped onion and sauté over medium heat for about 5 minutes.
Step 5
After 2 minutes of adding the onion, add the minced garlic and cook until the onion turns light brown. Add the coriander, turmeric, and cayenne pepper. Then add the peas, cilantro, and butter. Mix everything well and cook for another 5 minutes. Serve hot.
