Spicy Bean Soup
Ingredients
- Cilantro - 1 bunch
- Carrot - 17.6 oz
- Grated Ginger Root - 2 tablespoons
- Garam Masala - 2 teaspoons
- Vegetable Oil - 2 tablespoons
- Water - 5 cups
- Coconut Milk - 7 fl oz
- Canned Baby Beets - 10.6 oz
- Ground Black Pepper - to taste
- Salt - to taste
- Oranges - 1 piece
Step by Step guide
Step 1
Heat the oil in a soup pot and sauté the finely chopped carrot for 10–15 minutes.
Step 2
Add the ginger and garam masala and sauté for another minute.
Step 3
Pour in the orange juice and bring to a boil.
Step 4
Add the coconut milk and hot water; cook until the carrot is tender, then blend with an immersion blender.
Step 5
While the carrot is cooking, finely grind one long pippali pepper in a mortar, or simply use freshly ground black pepper.
Step 6
Add the beans, season with salt, bring to a boil, and turn off the heat immediately.
Step 7
Before serving, add the finely chopped cilantro.
