Ingredients
- Onion - 2 heads
- Garlic - 4 cloves
- Olive Oil - 8 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Ground Cumin - 2 teaspoons
- Ground coriander - 1 teaspoon
- Allspice berries - 1 teaspoon
- Tomatoes - 15.9 oz
- Vegetable Broth - 2 qt
- Beans - 1 can
- Brown Rice - 8 fl oz
- Yogurt - 8 fl oz
- Roasted pistachios - 8 fl oz
Step by Step guide
Step 1
Chop the onion and garlic in a blender. Heat the oil in a large pot over medium heat. Add the onion and garlic, season with salt and pepper, and sauté for about 3 minutes, stirring frequently, until softened. Add the cumin, coriander, and allspice, and sauté, stirring often, for about 5 minutes until the onion is golden brown. Add the tomatoes and simmer, stirring frequently, for about 5 minutes until thickened.
Step 2
Pour in the broth and bring to a boil. Add the beans, reduce the heat, and let simmer partially covered for 20 minutes. Add the rice and let simmer for 30-35 minutes, partially covered, until the rice and beans are tender; season with salt and pepper.
Step 3
Before serving, drizzle the soup with yogurt and sprinkle with pistachios.
