Ingredients
- Mackerel - 1 piece
- Water - 17 fl oz
- Salt - 2 tablespoons
- Bay leaf - 1 piece
- Sugar - 1 tablespoon
- Apple Cider Vinegar - 1 tablespoon
- Olive Oil - 1 tablespoon
- Onion - ½ head
- Mustard Greens - ½ teaspoon
- Green peppercorns - to taste
- Dill - 1 bunch
Step by Step guide
Step 1
Bring the water to a boil.
Step 2
Dissolve the salt and sugar in it, add the bay leaf and a few black peppercorns.
Step 3
Cool the brine to room temperature.
Step 4
Prepare the fish by removing the bones and skin, and cut it into small pieces.
Step 5
Submerge the fish in the brine for 1–1.5 hours.
Step 6
Slice the onion into feathers and chop the dill.
Step 7
Remove the fish pieces from the brine, dry them on paper towels, and then layer them in a jar. Between the layers of fish, add dill, onion, black pepper, and mustard seeds.
Step 8
Pour vinegar and olive oil over the top in the jar. The fish will be ready in one day.
Step 9
Consume the prepared fish within 3 days.
