Spicy Carrot and Lentil Soup
Ingredients
- Cumin Seeds - 2 teaspoons
- Chili Flakes - a pinch
- Olive Oil - 2 tablespoons
- Carrots - 21.2 oz
- Red Lentils - 4.9 oz
- Vegetable Broth - 1 qt
- Milk - 4 fl oz
- Yogurt - to taste
- White bread - to taste
Step by Step guide
Step 1
Toast the cumin seeds and chili flakes in a pan for 1 minute.
Step 2
Scoop out about half of the seeds and set aside.
Step 3
Add the oil, carrots, lentils, broth, and milk to the pan and bring to a boil. Simmer for 15 minutes until the lentils are soft.
Step 4
Blend the soup with an immersion blender until smooth.
Step 5
Season to taste and add a spoonful of yogurt. Sprinkle with cumin and chili. Serve with warmed bread.
