Ingredients

  • Potato - 2 pieces
  • Carrot - 2 lbs
  • Leek - 1 stalk
  • Onion - 1 head
  • Grated Ginger Root - 1.8 oz
  • Chicken Broth - 2 qt
  • 10% cream - 3 fl oz
  • Butter - 0.7 oz
  • Olive Oil - 1 fl oz
  • Cilantro - 1.8 oz
  • Coriander essential oil - ½ spoons
  • Black Cumin (Cumin) - ¼ spoons
  • Red Curry Powder - 1 tablespoon
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Finely chop the onion, ginger, and white part of the leek, and dice the carrot and potato into small cubes.

Step 2

Sauté ginger and onion in a mixture of butter and olive oil. Add cumin and coriander, and after half a minute, add the carrot. Stir and cook for three to five minutes, stirring occasionally. The carrot should become softer and slightly caramelized.

Step 3

Add the leeks and potatoes. Sprinkle the vegetables with a teaspoon of curry, stir, and sauté for another two to three minutes over medium heat to prevent burning.

Step 4

Now you need to pour in two liters of broth, add the cream, and cook the soup for twenty minutes. Season with salt and pepper, stir in chopped cilantro, and use an immersion blender to puree the contents of the pot or saucepan where you cooked everything into a smooth soup.
