Spicy Japanese Tofu Soup
Ingredients
- Rice - 3.5 oz
- Orange Bell Peppers - ½ piece
- Tofu - 1.8 oz
- Morels - 1.8 oz
- Lemon-Pepper Mix - to taste
- Soy Sauce - 1 fl oz
- Herbs - to taste
Step by Step guide
Step 1
If necessary, thaw the mushrooms and cut them into medium-sized pieces, just like the pepper and tofu.
Step 2
Rinse and boil the rice (I used round rice, but it’s not critical), DO NOT TURN IT OFF. Also, do not add too much water; the soup should be moderately thick, especially since we will add soy sauce later.
Step 3
Bring the mushrooms to a boil in a separate pot (about 7 minutes).
Step 4
Transfer to a frying pan and sauté in olive oil until golden brown (about 10 minutes).
Step 5
Add the mushrooms, pepper, and tofu to the rice, pour in the soy sauce, and add spices to taste (I used a mix of 4 peppers).
Step 6
Cook for 10 minutes on low heat, stirring. A couple of minutes before finishing, add the herbs (I used cilantro and dill).
Step 7
Turn off the soup and let it steep, covered, for 5 minutes. Voilà! Bon appétit!
