Description
Spicy Kuksi Soup with Kimchi
Ingredients
- Kimchi Pasta - 14.1 oz
- Rice Noodles - 10.6 oz
- Garlic - 6 cloves
- Toasted Cumin Seeds - 2 tablespoons
- Soy Sauce - 18 tablespoons
- Scallions - 1 bunch
- Beef Shank - 2 lbs
- Chili jam - 3 teaspoons
- Cucumbers - 3 pieces
Step by Step guide
Step 1
Boil the meat until cooked, cool it down, then separate from the bones and chop finely.
Step 2
Peel and finely chop the garlic. In a glass, mix the soy sauce and chili paste well, add the garlic and sesame seeds, and let it steep for about thirty minutes.
Step 3
Grate the cucumber using a Korean carrot grater or cut it into thin strips, and chop the kimchi into small pieces.
Step 4
Boil the noodles for five minutes, drain, rinse, and use a fork to twist them into nests according to the number of eaters.
Step 5
Heat the broth to boiling. Place the noodles in a bowl, pour the boiling broth over them. Add the meat, cucumber, kimchi, add 0.5 teaspoons of sauce (it is very spicy), and sprinkle with green onion on top.
