Spicy New Year's Pumpkin Soup with Shrimp
Ingredients
- Cilantro - 1 tablespoon
- Butternut Squash - 2 pieces
- Leek - 4 pieces
- Olive Oil - 4 tablespoons
- Salad Potatoes - 3 pieces
- Garlic - 3 cloves
- Salt - to taste
- Coconut Milk - 27 fl oz
- Ground Black Pepper - to taste
- Lemongrass - 3 pieces
- Peeled Cooked Shrimp - 10.6 oz
- Potato - 1 piece
- Mild Chili Spice - 2 pieces
- Chives - 0.4 oz
Step by Step guide
Step 1
In a large saucepan, heat the vegetable oil along with 1/2 tablespoon of salt and a small amount of pepper. Add the peeled and finely chopped leek stems, diced potatoes, and sauté, stirring constantly, over medium heat for about 5 minutes. Then add the minced garlic and diced pumpkin and tomato. Continue to sauté for 10 minutes until the vegetables are golden.
Step 2
Pour coconut milk and 1 liter of water (or enough to cover all the contents completely) into the saucepan. Crush the lemongrass and add it to the soup. Bring to a boil and simmer for 20 minutes until the pumpkin is thoroughly softened. Remove the lemongrass.
Step 3
Using an immersion blender, puree the soup. Return the saucepan to the heat and warm it up again. Ladle the soup into bowls.
Step 4
In a separate bowl, mix the chopped chili with the cooked and peeled shrimp, chopped chives, and minced cilantro leaves. Place a portion of the shrimp with chili and herbs in the center of each bowl.
