Spicy Parsnip Soup
Ingredients
- Onion - 1 head
- Garlic - 2 cloves
- Ginger - 1.4 oz
- Olive Oil - 1 fl oz
- Butter - 0.7 oz
- Garam Masala - 1 tablespoon
- Parsnip - 6 pieces
- Milk - 17 fl oz
- Chicken Broth - 25 fl oz
- Mild Chili Spice - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the onion, garlic, and ginger and chop them roughly.
Step 2
Heat some olive oil and butter in a large pot. Add the onion, garlic, ginger, and garam masala. Sauté for 10 minutes or until the onion becomes soft and sweet.
Step 3
Peel the parsnip and cut it into 3 cm pieces. Mix it with the onion mixture until it is coated with the spicy onion mass.
Step 4
Pour in the milk and broth, season well with salt and pepper, and bring to a boil. Reduce the heat and simmer for 30 minutes with the lid on.
Step 5
After half an hour, check if the parsnip is ready by inserting a knife into it. If the knife easily goes into the pieces, remove the soup from the heat and blend it until smooth. Taste and adjust seasoning as needed.
Step 6
Remove the seeds from the chili pepper, finely chop it, and sprinkle it over the soup. Serve with crusty bread and a few drops of extra virgin olive oil.
