Spicy Pickled Mackerel
Ingredients
- Mackerel - 2 pieces
- Water - 1 qt
- Salt - 3 tablespoons
- Sugar - 1 tablespoon
- Bay leaf - 3 pieces
- Allspice berries - 8 pieces
- Green peppercorns - 10 pieces
- Coriander essential oil - ½ teaspoon
- Spanish onions - to taste
Step by Step guide
Step 1
Take medium-sized mackerel, thaw them.
Step 10
Lay the fish first on paper towels to remove excess liquid, and then serve, garnished with rings of red onion.
Step 2
Remove the head, entrails, and fins. Cut each fish in half.
Step 3
Boil 1 liter of water. Add 3 tablespoons of salt.
Step 4
Add 1 tablespoon of sugar.
Step 5
Add the allspice berries.
Step 6
Add 3 bay leaves.
Step 7
Add a few black peppercorns.
Step 8
Add coriander. After adding all the ingredients, let the brine boil for 3–5 minutes and cool to room temperature.
Step 9
Place the mackerel in the cooled brine. Leave for 3 hours at room temperature and then for 8–12 hours in the refrigerator.
