Spicy Sauerkraut
Ingredients
- Turnips - 3 pieces
- Coarse Salt - 1 tablespoon
- Dried Rosemary - 1 tablespoon
- Dried Chili Pepper - ½ teaspoon
- Spanish onions - 2 heads
- Red Currant - 1 head
Step by Step guide
Step 1
In a large bowl, combine all the ingredients and massage with your hands until the cabbage starts to release its juice.
Step 2
Transfer the mixture to a wide sterilized plastic container with a capacity of 1 liter.
Step 3
Place a plate on top of the cabbage and weigh it down with a heavy jar or another weight so that the cabbage is submerged in the liquid.
Step 4
Wrap the container in a large kitchen towel and leave it at room temperature (20—23ºC) for 3 days.
Step 5
Remove the towel and transfer the cabbage to a sterilized 1-liter jar, cover with a lid, and chill in the refrigerator for 1 day before serving.
Step 6
Store the sauerkraut in the refrigerator for 1 week.
